PRETTY IN PINK SALAD

Naturally pink foods make me so happy! This salad recipe will brighten your day with its gorgeous color and delicious mix of beet, cherry, and goat cheese.

PRETTY IN PINK SALAD RECIPE makes 2 servings

INGREDIENTS

  • 5 oz baby spring mix

  • 1 small beet

  • handful of fresh cherries (10-12)

  • pickled shallot (can sub fresh shallot) julienned

  • 2 oz shelled pistachios

  • 1 small log of goat cheese (4 oz)

  • 1 lemon

  • microgreens (optional)

  • 1 tbsp olive oil

DIRECTIONS

  1. Prepare the beets: using gloves, peel your beet. Cut into small cubes and place in a bowl. Toss with olive oil, salt, and pepper. Cover with foil and bake 350F for 20 minutes or until beets are fork tender

  2. Once they have baked, set them aside to cool

  3. Prepare the dressing: remove the seeds from all of the cherries. Set aside 4 cherries and put the rest into a a small pot. Add 1/4 cup of water and cook until cherries have softened.

  4. When the cherries have softened, pour everything in the pot into a blender or food processor. Add 1/2 of the goat cheese log (approx. 2 oz), lemon zest, salt, pepper, and blend.

  5. Assemble the salad: Use half a spoonful of the goat cheese dressing to smear a circle onto the salad plate. This will help your mixed greens stay in place. Following the same circular shape, place your mixed greens and micro greens. Top with pickled shallots, pistachios, cherry halves, and crumbled goat cheese. Pour additional dressing to the center of the circle you made.
