KETO BAGEL
This bagel recipe is so simple it’s silly. I had to start learning how to make keto goodies for a private client of mine who is on a low carb diet and one of the first things I tackled was bagels. It wasn’t hard to find a good base recipe to experiment with, with the power of smart phones and internet at our fingertips. I just played with ingredient ratios to figure out one that worked for us. I’ll actually even use this recipe to make other things like flatbread crusts, etc.
KETO BAGEL RECIPE makes 1 large or 2 small
INGREDIENTS
1 1/2 cup almond flour
1/2 cup plain greek yogurt
1 tsp baking powder
1/2 tsp salt
1 egg
everything bagel seasoning or seasoning of choice (sesame seed, minced onion, dried berries)
DIRECTIONS
Combine almond flour, baking powder, and salt to a bowl and mix well.
Add the greek yogurt and mix until you get a dough that can come together in a ball. At this point you can also add your dried fruit mix-in if you wanted to make a fruity bagel.
Using your hands, shape the dough into a ball roughly the size of one bagel or two small bagels if you want. Use your index finger to poke a hold in the middle.
Place the bagel on a parchment lined baking tray with is sprayed with oil. Brush an egg wash over the bagel and add your desired toppings. If you want an eggless version you can also brush oil or butter instead of egg wash.
Bake at 325F for 40-45 minutes. Since this is an almond flour based recipe, I find that it tends to take a longer time to really cook all the way through and develop a thick enough crust to hold together. So the bigger your bagel, the longer it will take. I consider mine finished when it has become a nice golden brown color all around and when I poke into inner hole I don’t feel any wet batter.
When you remove the bagel from the oven you can of course enjoy it immediately if you like. I find that if you want to cut it in half to make a sandwich, it is best to give it time to cool. When the almond flour is very hot, it can tend to flake or break very easily. A cooled keto bagel is more knife friendly. Enjoy!
