GRILLED PEACH SALAD
This salad is a play on sweet and savory flavors. Sweetness from juicy peaches, heightened by searing them quickly on a very hot grill, on a bed of lightly wilted kale, a bite from crushed nuts, and feta cheese. This salad works great as a side if you are already grilling some entrees.
GRILLED PEACH SALAD RECIPE makes 8-10 servings
INGREDIENTS
8 oz of kale chopped small
4 ripe large peaches
1/4 cup chopped nuts of choice (I like almonds and walnuts)
1/4-1/2 cup feta cheese
2 garlic gloves mined finely
1/2 tsp red pepper flakes
salt and pepper
olive oil
DIRECTIONS
First you need to wilt the kale. This can be done in the oven or in a large sauté pan, the choice is yours.
If you are baking: clean, dry, and chop the kale and put in a mixing bowl. Drizzle about 3 tbsp of olive oil over top and season with salt, pepper, red pepper flakes, and finely minced garlic. Massage the oil and seasonings into the kale and pour onto a baking sheet. Roast in the oven at 350F for 8-12 minutes. You want the kale to be softened but not totally wilted. Immediately remove from the oven and transfer to a clean dish to cool in the fridge.
If you are sautéing: heat up the pan on medium high and drizzle with olive oil. Toast the red pepper flakes and garlic for 30 seconds before adding the kale. Tossing and mixing well, cook the kale until it is just barely softening about 45 seconds to 1.5 minutes. Do not over cook you want the kale to still have some body. Transfer to a clean dish and cool in the fridge.
Now let’s prepare the peaches. Keep the skins on and slice into wedges. Pat them dry. Give them a quick toss in a little olive oil and salt. Using tongs, place them on a very hot grill and allow them to get marked quickly before flipping, about 30-45 seconds each side. Remove from the grill and cool.
Assembling the salad from here is the easy part. To a large bowl add your tender kale, mixed nuts, and feta cheese. Toss evenly. Place the peach slices over top and serve! This salad tastes great with fruit based vinaigrettes or a poppyseed dressing.
